Leslie Johnson, MS, RD, CDCES
As a Registered Dietitian (RD) and Certified Diabetes Care and Education Specialist (CDCES), I founded Green Bean Grove to bridge the gap between food access and health. Diagnosed with type 1 diabetes at age 3, I have a lifelong connection to nutrition and a deep understanding of how food can both support and challenge well-being. With experience in medical nutrition therapy, diabetes care, community health, and public speaking, I empower individuals and organizations to make meaningful, sustainable choices. From one-on-one counseling to wellness workshops, I’m committed to building a future where food supports health for everyone. When I’m not working, I’m likely running, reading, or with my dog Lentil (yes, like the high-fiber legume!), a reminder that food, movement, and connection all matter.

Professional Experience

In my previous role at a Federally Qualified Health Center in Ohio, I developed and led a Food is Medicine program that included produce prescriptions and partnerships with local food banks. I also coordinated food security initiatives such as clinic-based food distributions, SNAP at farmers markets, and medically tailored grocery bags. Alongside these programs, I provided Medical Nutrition Therapy for patients managing diabetes, chronic kidney disease, hypertension, obesity, and gastrointestinal conditions. I have also led community nutrition workshops, health events, and speaking engagements aimed at preventing and managing chronic disease.
